I am pretty good about planning our meals out for the week. I buy all the needed groceries on Monday and the stress of “what’s for dinner” is alleviated. One thing I have learned about planning ahead is to always buy a few easy meal options, just in case.

For example my girlfriend called me on Monday night to ask if I would join her in some last-minute shopping. She is currently redoing a few rooms in her house and needed and extra set of eyes. Of course I agreed to join her! I just needed to adjust our dinner plan.

Originally I had planned to bake parmesan chicken for dinner, but there would not be time for that and shopping. Well actually there would be time but I had a list of chores that needed to be completed.

There were 4 loads of laundry to wash/dry/fold/ and put away. No, it could not wait another day, I still had 4 more to complete and needed the baskets!


There was also the lovely job of cleaning of dog “leftovers” in the backyard. The kids really wanted to be able to enjoy the spring weather but I knew the bombs needed to be cleaned first! Good thing I have kids eager to earn extra money!

Thankfully I picked up Stouffer’s Family Sized Meat Lover’s Lasagna and Texas Toast at Walmart last week.

This was the perfect easy meal we needed. All I had to do was whip up a salad while the Lasagna and toast baked, finish folding laundry and we would be all set. Well and make another loaf of bread, some of my kids were not in the mood for garlic breads so we baked a loaf of French bread at the same time as the lasagna.

Not only did the lasagna save me time in the kitchen, it saved on clean up as well. No need to wash a pan since it comes in its own ready to bake throw away container.
