My kids know that it’s a special day when I allow them to pack a lunch and bring it to school. I am “that Mom” who makes her kids eat school lunch daily. I do let them chose their menu items, but always encourage the healthiest option. When the stars align and we pack lunches for school you can be sure they are healthy lunches. Today I have a healthy kid approved lunch idea that’s sure to be a hit at your house as it is mine.
Let’s start with the smaller sections. We have fresh blueberries. My kids act like they are candy. Maybe that’s because I only buy them when they are 2.00 or less a pint. We also have baby carrots. And because I have created sauce addicts in my house, no lunch with fresh veggies is complete without a little container of ranch!
Moving on to the drink portion. I cannot always guarantee my kids will eat the fruit and veggies I have packed in their lunch. I can however guarantee that if I pack a fruit packed drink in their lunch they will drink that right up. My kids are loving the new Robinson’s FruitShoots. Our sandwich for this lunch is a healthy spin on a chicken salad sandwich. I substituted Mayo for avocado.
- 1 whole chicken (cooked in crock pot, or rotisserie chicken)
- 2 mashed avocados
- 4 hard-boiled eggs
- 1 packet guacamole seasoning
- 1-2 slices of cheddar cheese (per sandwich)
- fresh sandwich buns
- Take all the meat off the bone from your chicken and dice it up. Add to it the mashed avocados. Mix well. Dice up your hard boiled eggs and add them to the mixture. Stir in the guacamole seasoning
- Put mixture on fresh bun, add some sliced cheddar cheese. And you are done.
- I cut it in half to make it easier for the kids to eat!
