now that the kids are in school all day and i do not have to be mom taxi to and from i find myself working on fun DIY projects, crafts, and catching up on movies.
one thing i have learned is that if i am going to be a good wife/mom and still have craft/me time i need to plan ahead. I plan my meals a week at a time. not only does it help remove the dinner rush stress but it helps us save money on groceries. less carts full of random food.

easy crustless quiche #quickfixcasserole

one of my go to recipes is a quick and easy crust-less quiche. it has 3 special ingredients in it that make it so yummy! I’ll share the printable recipe at the end of this post.

you start by spraying a pie plate with cooking spray and preheat the oven to 350 degrees
whip together your mayo and milk. If you skip this step you will have chunks of mayo in your quiche. this also helps prevent over beating your eggs.

add in your grated Parmesan cheese, whip that in with the mayo/milk mixture.
add 2 tablespoons melted country crock and mix well.

now beat in your eggs. try not to over beat the mixture

fold in the shredded cheese, salt, and pepper

pour into pie plate, top with fresh parsley and oregano (optional)

bake for 35-40 minutes or until top is golden brown
i love preparing this quiche in the morning and having it ready to bake for dinner. sometimes we add mushrooms, broccoli, and spinach.

Recipe type: casserole, egg dish, quiche
Serves: 5
  • cooking spray
  • ½ c. milk
  • ⅓ c. mayonnaise
  • ⅓. c grated parmesan cheese
  • 1 c. shredded cheddar cheese
  • 2 TBS melted country crock
  • 6 eggs
  • salt/pepper to taste
  • parsley/oregano to taste (optional)
  1. preheat over to 350
  2. spray pie plate with cooking spray (8 or 9 inch should be fine)
  3. whip together milk and mayonnaise
  4. whip in parmesan cheese
  5. stir in butter
  6. beat in eggs
  7. fold in shredded cheese and salt/pepper
  8. pour into pie plate
  9. top with fresh herbs (optional)
  10. bake for 35-40 minutes, or until golden brown
